Abstract

Abstract: The freezing tunnels are widely used in the industrial refrigeration segment in order to accelerate thermal exchanges and lower the temperature of various food products, managing to preserve their desirable color, flavor and aroma properties for longer periods of time. human consumption. In order to dimension the capacities of the equipment that make up an industrial refrigeration cycle with a greater degree of precision, it is necessary to understand what the thermal load is and how to use it. This work had the purpose of calculating the total thermal load of a static freezing tunnel for birds, with a capacity of 35,000 kg, with a retention time of 12 h, in a poultry slaughterhouse located in Santa Izabel do Pará / PA , check the main sources of thermal load and compare the result of the theoretical calculation with the cooling capacity of the air coolers (evaporators) in the respective tunnel. Through field research on visits to the slaughterhouse between the second semester of 2019 and the first semester of 2021 and an exploratory bibliographic research, the factors of infiltration, penetration, products and miscellaneous were specifically analyzed. The results indicated that the total thermal load calculated was 297 301.7095 kcal / h and it was concluded that the product factor is the biggest contributor with 80.28% and that the existing evaporators were around 14, 65% higher in capacity than the theoretical calculation performed in this work.
