UM DIMENSIONAMENTO DE UM TROCADOR DE CALOR APLICADO Á PRODUÇÃO DE CERVEJA ARTESANAL
Abstract
Heat exchangers are equipment developed in order to exchange thermal energy between two fluids that initially have different temperatures and are separated by a solid wall that allows heat transfer. The present work demonstrate the design of a heat exchanger for cooling the wort after boiling in the craft beer manufacturing process, based on the production process informed in the Weiss beer recipe. The choice of the type of construction of the heat exchanger and its dimensioning were the main topics addressed in the course of the work. To assist in the results, an algorithm developed in the Microsoft Excel 2016 program was used, and the modeling was carried out in Inventor 2018. The dimensioned system obtained a logarithmic mean temperature difference (DTML) of 33.93°C, with global coefficient and transfer of heat of 412.4013 W/m²K obtaining an effectiveness of 69.23%. The dimensioned heat exchanger has a total length of 30m, an exchange area of 4.92m² and meets the applications suggested in this study.
