Towards a history of food freshness
going beyond subsistence and seasonality in Portugal (19th -20th centuries)

The interpretations of food practices in contemporary Portugal are the central object of analysis in this article. The conceptual basis of the text is linked to the interpretation of food freshness and how this is a space of mediation between everyday food and the forms of supply to the population, which allowed us to understand that it went beyond the limits of an economic practice, having social, cultural and scientific aspects.
